Healthy rice with vegetables | Asian inspired recipes you’ll love

The best healthy dishes are the ones that contain healthy starches, vegetables, and protein, to get all the nutrition that your body needs. That’s why I chose to make healthy rice with vegetables, not only is it good for you but it tastes great too. It is effortless to make, all you need is rice, veggies, and chicken breast. Keep reading for tips on how to make this yummy but nutritious dinner.

Ingredients you’ll need for the healthy rice with vegetables dish:
- 200 g of rice ( long rice).
- 100 g Chicken breast. ( cut into medium pieces).
- 100g of peas.
- 50g mashed tomato.
- 50g Mashed onions.
- Three carrots.
- ½ Tablespoon of mashed garlic.
- One bunch of coriander.
- One teaspoon of black pepper.
- A tablespoon of olive oil.
- ½ cup corn canned.
- Two cups of warm water.

Instructions:
- First, wash the rice well and set it aside.
- Cut the carrots into small pieces.
- Boil the carrots and the peas in warm water for 20 minutes.
- In a pot with TBSP of olive oil, Add the chicken and cook for 10 minutes,
- Add onions, mashed garlic, a bunch of coriander and stir well.
- Now add salt, black pepper, and mashed tomato. Let it cook over medium heat for 10 minutes. Then add the boiled carrots, peas and corn canned. Stir well.
- Now add the rice and two cups of warm water. Stir well.
- In Deficient heat, let the ingredients cook for about 30 minutes or until all the water is absorbed.
- Once your delicious and healthy rice is ready, serve it and enjoy your delicious healthy rice with vegetables dinner.
