How to make the fluffiest Pancakes ever for Pancake Day
Pancake Day is the only day in February I really look forward to – it’s basically an excuse to eat stacks of fluffy goodness (and not feel guilty about it).. But if your pancakes look more like a French crepe, then the American inspired pancakes you dream of, don’t worry. I’ve got you.
This guide will show you exactly how to make the fluffiest pancakes every single time. Plus if you don’t fancy plain pancakes, i’ll show you what to add to make them extra tasty.
The secret to making super fluffy pancakes
Before we jump into the recipe, here are the golden rules of fluffiness:
- Don’t overmix the batter – lumps are your friend
- Use fresh baking powder – it’s the secret to super fluffy pancakes
- Let the batter rest – 10 minutes makes a difference
- Low to medium heat – slow cooking = fluffy inside
Now let’s get cooking.
The ultimate fluffy pancake recipe for Pancake Day
Ingredients (Makes 8–10 pancakes)
- 200g plain flour
- 2 tsp baking powder
- 1 tbsp sugar
- Pinch of salt
- 1 large egg
- 250ml milk (or plant-based milk)
- 1 tsp vanilla extract (optional but recommended)
- 2 tbsp melted butter or oil
Method
- In a bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, mix the egg, milk, vanilla, and melted butter.
- Pour the wet ingredients into the dry and gently fold until just combined. Lumpy batter = fluffy pancakes.
- Let the batter rest for 10 minutes.
- Heat a non-stick pan on low–medium heat and lightly grease.
- Spoon batter into the pan and cook until bubbles appear (about 2 minutes), then flip and cook for another minute.
Stack, serve, and enjoy!
Pancake day variations you’ll love
Chocolate Chip Pancakes
Fold a handful of chocolate chips into the batter just before cooking. Serve with maple syrup or Nutella for maximum indulgence.
Banana Pancakes
My personal favourite. Mash 1 ripe banana and mix it into the wet ingredients. Perfect with honey, peanut butter, or Greek yoghurt.
Berry Pancakes
Sprinkle blueberries, raspberries, or strawberries onto the pancakes once they’re in the pan. This stops the batter from turning purple and keeps things fluffy.
Vanilla Funfetti Pancakes
Add extra vanilla extract and a tablespoon of sprinkles. Ideal for kids—or adults who refuse to grow up.
Vegan Fluffy Pancakes
If you’re vegan you can still enjoy pancakes, simply swap the dairy products for the alternatives listed below.
Swap:
Egg → 1 tbsp ground flaxseed + 3 tbsp water
Milk → oat, almond, or soy milk
Butter → vegetable oil
Still fluffy. Still delicious.
Protein Pancakes
If you’re on a calorie deficit but don’t want to miss out on the fun, you could try Protein Pancakes. Simply replace 50g of flour with vanilla protein powder and add an extra splash of milk. Great topped with yoghurt and fruit.
Toppings that make pancakes even better
- Maple syrup (classic for a reason)
- Fresh fruit & berries
- Whipped cream or Greek yoghurt
- Nut butters
- Chocolate spread
- Lemon & sugar (a Pancake Day classic 🍋)
Final pancake tip
If you want restaurant-level fluff, keep cooked pancakes warm in a low oven while you finish the batch. Then serve them all at once—because no one deserves cold pancakes.
