How to make banana cupcakes with chocolate cornflake nests

With Easter coming up I wanted to get creative and create a culinary delight. I decided to go with banana cupcakes with chocolate cornflake nests with mini eggs. Initially it was just going to be plain cupcakes but with only one egg (the recipe needed 2) I had to improvise, hence the banana addition. I have to say though this recipe for banana cupcakes made cakes that tasted amazing. So without further ado here’s what’s required to create banana cupcakes with a chocolate cornflake nest.

  1. Mix butter and sugar in a large bowl and beat until the mixture is light and fluffy.
  2. Gradually beat your egg into the mixture (2 ideally but you can improvise as I did!)
  3. Add half a banana into your mixture
  4. Sift in your flour and fold into the mixture

5. Put your mixture into 12 cupcake cases – you can opt for plain cases or go for something a little bit different like my London themed cases.

After creating your cupcakes put them into the oven for up to 30 minutes at 180c/350f/ Gas 4 and wait for them to rise. Whilst you’re waiting it’s time to create your nests.

How to create your chocolate nest cake recipe:

  1. Melt the chocolate, syrup (or honey) and butter on a low heat or in the microwave if you’re rushed for time.
  2. Stir in the cornflakes
  3. Put the mixture on top of your cupcakes in a nest shape (make sure they’ve cooled down first!).
  4. Add your mini eyes or other sweets if you fancy something a little bit different.
